Roasted Vegetable Lasagna

This dish is a great way to serve a crowd. Roasted vegetables are layered between lasagna noodles and a creamy cheese sauce, making a delicious and filling dish.

Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 2 zucchini, diced
  • 1 eggplant, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 package no-boil lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 jar marinara sauce

Instructions:

  1. Preheat oven to 375°F.
  2. In a large bowl, combine onion, garlic, bell peppers, zucchini, eggplant, olive oil, oregano, basil, thyme, salt and pepper. Toss to combine.
  3. Spread vegetables onto a large baking sheet. Roast for 15-20 minutes, or until vegetables are tender.
  4. Meanwhile, in a medium bowl, combine ricotta cheese, 1 cup mozzarella cheese, and 1/2 cup Parmesan cheese. Stir to combine.
  5. Spread 1/2 cup of marinara sauce into the bottom of a 9x13-inch baking dish.
  6. Top with a single layer of lasagna noodles, breaking noodles as necessary to fit the pan.
  7. Spread ricotta cheese mixture over the top of the noodles.
  8. Top with a single layer of roasted vegetables.
  9. Top with another single layer of lasagna noodles.
  10. Spread remaining marinara sauce over the top of the noodles.
  11. Top with remaining mozzarella cheese and Parmesan cheese.
  12. Cover with aluminum foil and bake for 25 minutes.
  13. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
  14. Let cool for 10 minutes before serving.

Grilled Portobello Mushroom Burgers

These delicious burgers are a great alternative to traditional burgers. The grilled portobello mushrooms are juicy and flavorful, and are sure to please any vegetarian guest.

Ingredients:

  • 4 portobello mushrooms, stems removed
  • 2 tablespoons olive oil
