- 1 onion, diced

- 2 bell peppers, diced
- 2 zucchini, diced
- 1 eggplant, diced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 package no-boil lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 jar marinara sauce
Instructions:
- Preheat oven to 375°F.
- In a large bowl, combine onion, garlic, bell peppers, zucchini, eggplant, olive oil, oregano, basil, thyme, salt and pepper. Toss to combine.
- Spread vegetables onto a large baking sheet. Roast for 15-20 minutes, or until vegetables are tender.
- Meanwhile, in a medium bowl, combine ricotta cheese, 1 cup mozzarella cheese, and 1/2 cup Parmesan cheese. Stir to combine.
- Spread 1/2 cup of marinara sauce into the bottom of a 9x13-inch baking dish.
- Top with a single layer of lasagna noodles, breaking noodles as necessary to fit the pan.
- Spread ricotta cheese mixture over the top of the noodles.
- Top with a single layer of roasted vegetables.
- Top with another single layer of lasagna noodles.
- Spread remaining marinara sauce over the top of the noodles.
- Top with remaining mozzarella cheese and Parmesan cheese.
- Cover with aluminum foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Let cool for 10 minutes before serving.
Grilled Portobello Mushroom Burgers
